History and Origin of Mexican Cacao: The word “cacao” derives from the Olmec and subsequent Mayan languages, “kakaw.” This tropical plant has its roots in Mesoamerica, a region that encompasses what is now Mexico. The ancient Olmecs were likely the first to cultivate cacao over 3,000 years ago. Later, the Mayans and Aztecs adopted and revered cacao, using it in religious ceremonies and as currency.

Cacao in Aztec and Mayan Culture: For the Aztecs, cacao was considered a divine gift from the god Quetzalcoatl. They used it to prepare a drink called "xocoatl," which was consumed for its energetic and spiritual properties. The Mayans also valued cacao, preparing a frothy, bitter drink reserved for the elite and for religious rituals.

Production and Varieties: In Mexico, cacao is grown primarily in the states of Tabasco, Chiapas, and Oaxaca. Prominent varieties include Criollo cacao, known for its superior flavor and high quality, although it is more difficult to cultivate and more susceptible to disease.

Cacao in Mexican Cuisine: Cacao is an essential ingredient in Mexican cuisine, present in traditional recipes such as mole, a rich and complex dish that combines cacao with chilies and spices. It is also the main component of table cacao, used to prepare the traditional hot beverage "Cacao de metate."
